Got some bananas leftover? Here’s an easy muffin recipe I have tried and enjoyed using bananas.

To yield a dozen you’ll need:

190 g all-purpose flour
3 g baking powder
5 g baking soda
3 g salt
3 large ripe bananas, mashed
150 g white sugar
1 egg
75 g butter, melted

Here’s how:

Preheat oven to 180 degrees C.

Mash bananas.

Add sugar and egg.

Stir in melted butter.

Sift together the flour, baking powder, bicarbonate of soda and salt.

Fold in flour mixture, and mix until smooth.

Spoon evenly into baking cases in muffin tin.

Pop into preheated oven and bake for 25 to 30 minutes or until muffins spring back when lightly tapped.

Now here’s what it looked like after 25 minutes.

Cool for 10 minutes. Remove from pan to a wire rack to cool completely.

Cozy up and serve with a cup of coffee or tea.
